Happy 1st Birthday to us!

Can you believe it’s been a whole year since we opened our doors as Aberystwyth’s Number One Gourmet Welsh Burger Restaurant? We certainly can’t. We haven’t stopped since!

Here are some facts:

  • 50+ Welsh suppliers

Ok, some of our facts might not be exact but our we’ll tell you what we do know – Burgers.

And also, outstanding Welsh food and drink.

Our mission statement is to:

  • Showcase local ingredients
  • Engineer awesome flavours
  • Build epic burgers
  • Champion Wales and the Welsh language

We’re not shy to say that we think we’ve done this pretty impressive over the last twelve months, but where did it all begin?

Byrgyr’s Origin Story
Let’s go back to the start.

The idea for Bygryr first came up when Aled Rees, Aled Davies, Dafydd Alun Jones, Wyn Morris and Llion Pughe decided they wanted to launch a business in Aberystwyth to showcase Welsh produce. They all know each other (it’s Ceredigion after all), and they all agreed that although Aberystwyth has a growing gastronomic scene, something was missing.

The ideas came thick and fast, from growing tea to making ice cream…but there was one clear winner.  

As five farmers’ sons – with appetites to match – a Welsh focused burger restaurant was the obvious choice. But not just any restaurant, a gourmet burger experience focussing on the best produce and ingredients Wales had to offer.

Aberystwyth’s old Theology college, The Cambria, was the perfect venue choice, due to its incredible space and beautiful huge windows. The massive windows make our restaurant airy and light and give our guests a chance to enjoy fabulous views of Aberystwyth seafront and our famous pier, as they eat and drink.

That was it…Byrgyr was born.

Our Epic Suppliers
From then on it has been a simple case of finding the highest quality suppliers to make our Welsh Burger dreams come true. How hard could it be? After you can’t go a mile in our beautiful country without coming across a farm, dairy or artisan producer. Well, it turns out the problem was narrowing our options down – there were so many to choose from.

Local boy Rob Rattray provides the majority of our meat, with our beef burgers made with our own recipe; we couldn’t live without Perl Las and Snowdonia cheese; BRYBEQUE extra zing to our burgers and, after plenty of taste tests, we settled on too many local suppliers to name. (Kee an eye out for our supplier focus blogs over the next few months)

Our drinks menu needs a blog of its own but suffice to say we enjoyed sampling plenty before settling on gems like Brecon gin, Barti Ddu Rum and Cwrw Llŷn, Purple Moose & Bluestone Brewery beer.

We will be showcasing our suppliers across our blog over the coming months so be sure to keep an eye out so you can read your favourite burger’s journey from gate, to plate.

Eco Ethos
Another important element for Byrgyr is our commitment to the environment. We do take-aways – of course, but did you know all Byrgyr’s packaging is completely plastic-free? It looks fabulous too!!

Spreading the Byrgyr Fever
Our reviews speak for themselves and we are rated consistently high on trip advisor our feedback is always the same:

“Friendly, welcoming staff, nothing too much trouble, delicious homemade burgers, great selection of drinks.”

We couldn’t be prouder of our excellent team and would like to thank them for everything we’ve achieved together over the past year.

We have welcomed a host of famous Welsh faces to Byrgyr since we opened, such as Ben Lake, Ceredigion’s MP, hosted a comedy night and a HAKA Entertainment evening with Three-Legged Mare, and even a Welsh poetry evening hosted by Eurig Sailsbury and Hywel Griffiths to name a few.

We’ve attended local food and drink events like the Cardigan Bay Seafood Festival at Aberaeron, where our Môr a Mynydd burgers went down a storm alongside some of Wales’ most exclusive chefs like Gareth Ward from Ynys Hir and Tommy Heany from Heany’s in Cardiff. The feedback was fabulous, and we can’t wait for next year!  As well as this event we also attended the Lampeter Food Festival and have been proud partners for the Advancing Aberystwyth Outdoor Cinema events.

Not just a Byrgyr Joint
As a local Welsh business our focus is always on incorporating and encouraging Welsh language at every opportunity. Byrgyr is a place where you can come to practice your Welsh too. Gain confidence ordering, chat with staff and make new friends each time you dine with us. Every Wednesday morning, we host Clwb Clonc – an opportunity to meet and socialise with fellow Welsh speakers, learners and anyone interested in our beautiful language. You get free coffee and a cake too!

If you haven’t had an opportunity to get down and visit us at Byrgyr yet we’d love to see you. Our takeaways are perfect for enjoying on the beach as you watch the sun set over our magical Cardigan Bay. If you’re feeling lazy (or a little fragile – we’ve all been there) our Byrgyr delivery service ticks all the boxes.
